OUR FOOD
Developing new recipes is a daily occurrence here at the lodge, where cooking and eating are acts of discovery. When it comes to food we are dedicated to finding ingredients that are in season, local, organic, wholesome and delicious. Along with serving from our own garden and orchard, Chef DuFour continues to look for additional organic and local partners.Buffet in the Whale Room

Whether dining in the Canoe Club Café off an a la carte menu or helping yourself to the Chef’s daily creations in the Whale Room, you can always be assured that the food is made with our environment and your wellbeing in mind.

WHALE ROOM DINING
This casual style of dining features an array of appetizing foods presented for guest to help themselves to. These meals are served at set times for all our guests to enjoy together. During the spring and fall we host educational groups which also dine in the Whale Room creating an energetic atmosphere.

Whale Room Meal Possibilities
Breakfast: Fresh baked muffins, fresh fruit, granola, hot cereals, eggs, pancakes or French toast.
Lunch: House-made soups, casseroles, sandwiches, ethnic dishes, selection of salads, and daily kitchen inspirations.
Dinner: Each night the kitchen will prepare a variety of foods ensuring something for everyone. Whether you’re a vegetarian, vegan, celiac, dairy free or a carnivore your taste-buds are bound to be satisfied. From West Coast Cuisine to flavors from India, each dinner will consist of a cornucopia of salads, fresh breads, main dishes and delectable desserts.

During the summer season our Canoe Club Café welcomes all guests, locals and food lovers alike to discover the finer side of Strathcona dining while enjoying the remarkable lake view setting.

SUSTAINABILITY
In order to reduce our Carbon Footprint the kitchen and dining have adopted many ideas and systems to help in this initiative:

Composting of all organic material
Installation of low flow spray heads to reduce water consumption
Installation of roof top vacuum-tube solar hot water systems. (In 2009 this reduced our propane use by 25 600 Litres)
Working with local suppliers to meet our food product needs
Encourage students to minimize their environmental footprint through education and our values such as “stewardship” and “more with less.”

Sustainability and innovation is an important aspect in all our actions concerning the environment we live in. We are constantly looking for new ways to increase efficiency and decrease impacts in our kitchen and dining practices.

For the 2010 season, I am honored to be surrounded by a wonderful team of creative people. When using ever-changing fresh local ingredients, flexibility and creativity becomes the key to success.
